Red Curry

The red colouring of red curry is derived from its red curry paste, which is a ground down paste commonly made from dry red chili peppers, garlic, shallots, galangal, shrimp paste, salt, kaffir lime peel, coriander root, coriander seeds, cumin seeds, peppercorns and lemongrass. The curry sauce is made by cooking this paste in coconut milk. Of the curries, red is traditionally the spiciest. Some choose to use chilli powder rather than red chillies in order to create a more enhanced colour and a deeper flavour.

Green Curry

Like the red curry, green curry is derived from its green curry paste, which is a ground down paste commonly made from dry green chilli peppers, shallots, garlic, galangal, lemongrass, kaffir lime peel, cilantro roots (coriander), cumin seeds, white peppercorns, shrimp paste and salt. The curry sauce is made by cooking this paste in coconut milk. Of the curries, green curry is traditionally the ‘sweetest’. Although the spiciness can vary with green curry, it is usually less spicy than other types of curries. The thickness and consistency of this curry (as with others) can vary depending upon the amount of coconut milk that is added.
